Wines: Per Cazo Cellars makes 4-6 wines per year totaling less than 1000 cases. We specialize in Rhone style blends and varietals as well as some wonderful Bordeaux'. Our Rhones are full bodied Syrah, Grenache, Mourvedre and Zinfandel varietals, the likes of which the Westside of Paso Robles is known. The Bordeaux' use the luscious Cabernet Sauvignon, Merlot and Cabernet Franc grapes from the best Paso Robles Westside vineyards and from carefully selected vineyards on the Eastside of Paso Robles that meet our exacting standards. We hope these discreet Eastside vineyards will remain our little secret. We make only one white wine and it comes from vineyards in the Santa Barbara AVA that specialize in the Rhone varietals of Grenache Blanc, Roussanne and Viognier. We think of this as a white wine for red wine drinkers. You know who you are and we encourage you to try our Tres Blanc. You won't be disappointed! |

White Wine: 2008 Tres Blanc, is
a white wine blend made of 44%, Grenache Blanc, 44% Roussane and 12%
Viognier. Tres Blanc has the nose of pear and melon perfumed with honeysuckle.
This wine has body that fills the palate but enough acidity to leave
your mouth feeling refreshed. Tres Blanc is a white wine for red wine
drinkers. Red Wines: 2007 Confluent, is a
Bordeaux blend of 66% Cabernet Sauvignon and 34% Merlot. We blended Merlot
with Cabernet Sauvignon from two different Westside Paso Robles vineyards
to create this special wine. The full body of Westside Paso Cabernet
coupled with the smooth Merlot give Confluent that satisfying Bordeaux
finish—the luscious rich, round, ripe berry flavors make it Lynne's favorite. 2007 Epi Telos, Dave's
favorite is a traditional Rhone "GSM" blend of 22% Grenache, 66% Syrah,
and 12% Mouverdre. Epi Telos blends the bold inky Syrah with the mellower
tones of Grenache and Mouverdre to create a full bodied Rhone wine that
rivals anything Napa could throw at it. Take the challenge and enjoy
this remarkable wine for half the price of many Cabernets. 2006 ZinG, Zin in Grenache
is a 34% Zinfandel and 66% Grenache blend. These Rhone varietals are
not often found in a single blend. The supple Grenache with the bolder
Zinfandel makes a perfect, lighter Rhone blend. If you aren't familiar
with the taste of Grenache and Zinfandel together, try this wine and
you won't be disappointed. 2007 Late Harvest Zinfandel,
i s a dessert wine to drink before, during and after a delicious meal
. With 31.2 brix at harvest and a low residual sugar of of only 3.2%,
this Late Harvest Zinfandel pairs wonderfully with almost any cheese,
and dark chocolate too. We have friends who delight in its round soft
flavor and say they drink it early and often - it's like going on vacation.
Bottled in 375ml splits with wax tops. |
